Oatmeal Almond Banana Pancakes


This afternoon’s (yes, afternoon) breakfast. Homemade almond milk, roasted dandelion cappuccinos WITH that almond milk, and oatmeal almond banana pancakes (with the leftover almond pulp). Is it possible to start off the day any yummier?

Almond Milk 2

Dandilion CappacinoOatmeal Almond Banana Pancakes

1 cup rolled oats
1 cup almond pulp (or flour)
1 cup almond milk
2 ripe bananas
1/2 teaspoon cinnamon
1 heaping tablespoon honey
1/4 teaspoon sea salt
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder
1 large egg
Coconut oil for cooking

Optional Topping
Toasted pecans
Pure maple syrup (of course!)

Place all ingredients, except egg and coconut oil into blender and blend until smooth. Beat egg and add to batter.
Grill pancakes over medium heat with one teaspoon of coconut oil

I’m trying to get off wheat and sugar, so I’ve been lokniog for a starter recipe using almond flour, this one turned out pretty well, despite a lot of substitutions I used half chickpea flour, I added cocoa instead of chocolate chips, subbed earth balance for the fat and sweetened with a little coconut sugar and stevia. Still pretty delicious, so thanks great recipe, really simple and flexible!
